Ingredients

  • 2 tablespoons olive oil, divided
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 5 Yukon Gold potatoes (about 1 lb.), cut into 1-inch cubes
  • 1 large sweet potato, cut into 1-inch cubes
  • 1 teaspoon thyme, dried or fresh
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder, or to taste
  • A dash or two of allspice or nutmeg, optional
  • Mineral salt and cracked pepper, to taste

Instructions

  1. In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the chopped onion and red bell pepper. Cook for about 5 minutes, stirring occasionally, until the onions are softened and fragrant.
  2. Next, toss in the Yukon Gold and sweet potatoes, along with the thyme, garlic powder, and chipotle powder. Add the remaining tablespoon of olive oil and stir well to combine everything.
  3. Reduce the heat to medium-low, and cover the skillet. Cook uncovered for about 25 to 30 minutes, stirring occasionally, until the potatoes are golden brown with crispy edges.
  4. Before serving, taste and season with mineral salt and cracked pepper to your preference. Serve hot and enjoy!

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. For crispy reheating, use a skillet instead of a microwave.
