Description

Delicious homemade watermelon gummies that are a healthier alternative to store-bought treats, using fresh ingredients.

Ingredients

Scale
  • 4 cups watermelon cubes/chunks
  • 1/2 cup coconut water (or juice of any kind)
  • 2 teaspoons mineral salt
  • 5 tablespoons gelatin

Instructions

  1. Add the coconut water, watermelon, and salt to a blender. Blend until smooth.
  2. Strain the blended watermelon using a fine mesh strainer or cheesecloth to remove pulp.
  3. Pour the juice evenly—half into a small saucepan and the other half into a large mixing bowl.
  4. Sprinkle the gelatin over the juice in the mixing bowl and let sit for about 5 minutes.
  5. Warm the juice in the saucepan over low heat, stirring gently until warm but not boiling.
  6. Add the gelatin mixture to the saucepan and whisk until fully combined.
  7. Pour the mixture into gummy molds or a refrigerator-safe dish and chill for about 30 minutes until set.
  8. Unmold the gummies or slice them into pieces and enjoy!

Notes

Store gummies in an airtight container in the fridge for up to 1 week.
