Ingredients

- 4 cups watermelon cubes/chunks
- 1/2 cup coconut water (or juice of any kind)
- 2 teaspoons mineral salt
- 5 tablespoons gelatin
Instructions
- Add the coconut water, watermelon, and salt to a blender. Blend until smooth.
- Strain the blended watermelon using a fine mesh strainer or cheesecloth to remove pulp.
- Pour the juice evenly—half into a small saucepan and the other half into a large mixing bowl.
- Sprinkle the gelatin over the juice in the mixing bowl and let sit for about 5 minutes.
- Warm the juice in the saucepan over low heat, stirring gently until warm but not boiling.
- Add the gelatin mixture to the saucepan and whisk until fully combined.
- Pour the mixture into gummy molds or a refrigerator-safe dish and chill for about 30 minutes until set.
- Unmold the gummies or slice them into pieces and enjoy!

Store gummies in an airtight container in the fridge for up to 1 week.
