Ingredients

  • 1 tablespoon baking powder
  • 1 tablespoon chai spice mix
  • 1/4 cup maple syrup or agave syrup
  • 1 cup plant-based milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a bowl or blender, combine the flour, baking powder, chai spice mix, and a pinch of salt. Whisk or blend until evenly mixed.
  2. In a separate bowl, mix the plant-based milk, maple syrup, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  4. Preheat a non-stick skillet or griddle over medium heat. If needed, add cooking spray or melt a bit of vegan butter to prevent sticking.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2–3 minutes.
  6. Carefully flip the pancake and cook for another 1–2 minutes until golden brown.
  7. Serve warm with your favorite toppings.

Notes

Make sure your plant-based milk is at room temperature for a smooth batter. A tablespoon of melted coconut oil can be added for extra richness.
