A comforting, plant-based twist on a classic schnitzel, made with extra firm tofu for a satisfying and savory meal.

- 14 ounces extra firm tofu (pressed for at least 15 minutes)
- 1/2 cup water or vegetable stock
- 1/2 teaspoon garlic powder
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1/2 teaspoon poultry seasoning (or concentrated bouillon)
- 1/2 cup non-dairy milk (almond or soy recommended)
- 4 tablespoons flour (all-purpose or chickpea flour for gluten-free)
- 1 tablespoon soy sauce
- 1 teaspoon freshly ground black pepper
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon poultry seasoning (or all-purpose seasoning)
- 1/2 teaspoon salt
- 1 1/4 cup breadcrumbs (or panko for extra crunch)
- 1/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon oil (for frying)
Instructions
- Press tofu wrapped in a dish towel under a heavy skillet for at least 15 minutes to remove excess moisture.
- Slice tofu into 1/2 inch thick pieces. In a bowl, combine water (or stock), garlic powder, soy sauce, and poultry seasoning; marinate the tofu slices for at least 15 minutes.
- Whisk together non-dairy milk and flour in one bowl. In another bowl, mix breadcrumbs, onion powder, garlic powder, poultry seasoning, salt, and black pepper.
- Heat oil in a skillet over medium heat. Remove marinated tofu slices, dip in flour mixture, then coat with breadcrumbs.
- Fry coated tofu slices for 3-4 minutes on each side until golden brown and crispy.
Notes
Ensure tofu is well-pressed for best results. Leftovers can be stored in the fridge for up to 3 days.
