Description

A delicious fusion of Indian tikka masala and Mexican birria tacos, these Vegan Tikka Masala Birria Tacos are packed with flavor, creamy textures, and are perfect for any occasion.


Ingredients

  • ½ cup Tomato Paste
  • 3 tablespoons Non-Dairy Yogurt or non-dairy cream
  • 12 teaspoons Garam Masala
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 teaspoon Kashmiri Chili Powder or paprika
  • ½ teaspoon Amchoor Powder (optional)
  • ½1 teaspoon Lime Juice (optional)
  • 1 ½ cups Water
  • 12 ounces Sliced Mushrooms
  • ½ Green Pepper, thinly sliced
  • ½ Red Pepper, thinly sliced
  • ½ Red Onion, thinly sliced
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 2 teaspoons Taco Spice Blend
  • 34 tablespoons Tikka Masala Sauce
  • 10 to 12 5-inch Tortillas
  • 1 cup Vegan Mozzarella Cheese
  • A few teaspoons Oil
  • Chopped Red or White Onion (for garnish)
  • Chopped Cilantro (for garnish)
  • Lime Wedges (for garnish)
  • Sliced Jalapeños (for garnish)

Instructions

  1. Prepare the Tikka Masala Sauce: In a bowl, combine all the tikka masala sauce ingredients. Mix vigorously until well-integrated. Taste and adjust seasoning; set aside.
  2. Cook the Filling: Heat a skillet over medium-high heat. Add oil or broth for sautéing. Toss in mushrooms, peppers, and onion, and cook until golden, about 3-5 minutes. Add taco spice mix and remaining salt; cook for another 2-3 minutes. Stir in 3 tablespoons of tikka masala sauce; remove from heat.
  3. Assemble Tacos: Heat another skillet and add oil. Dip a tortilla into tikka sauce, lay it on the skillet, add filling and vegan cheese on one half. Fold and cook until golden brown and cheese is melted. Repeat for all tortillas.
  4. Serve: Heat remaining tikka masala sauce and serve alongside tacos for dipping. Garnish accordingly.

Notes

For a crunchier texture, lightly fry the tortillas before assembling. Store leftovers filling and tortillas in separate containers for up to 3 days.
