Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce or tamari (for gluten-free)
  • 1/4 cup maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 cups cooked chickpeas (or one 15 oz can, drained and rinsed)
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Cooked rice or quinoa, for serving
  • Steamed or roasted vegetables, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until translucent.
  2. Add minced garlic and sauté until fragrant.
  3. In a bowl, whisk together soy sauce, maple syrup, rice vinegar, and toasted sesame oil.
  4. Pour the sauce mixture into the skillet with onions and garlic, stirring well.
  5. Dissolve cornstarch in water, add to skillet, and stir until the sauce thickens.
  6. Fold in chickpeas and simmer until heated through.
  7. Garnish with sesame seeds and green onions. Serve over rice or quinoa with vegetables.

Notes

For a spicier kick, add crushed red pepper flakes or sriracha. Can store leftovers in an airtight container for up to 3 days.
