Ingredients

  • 1 cup shredded coconut (organic, unsweetened)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup or agave syrup
  • 1 cup fresh or frozen raspberries
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. In a high-speed blender, combine the shredded coconut, cocoa powder, melted coconut oil, maple syrup, raspberries, vanilla extract, and salt. Blend until smooth and creamy, about 2-3 minutes.
  2. Pour the mixture into a lined 8×8 baking dish and spread it evenly.
  3. Place the dish in the freezer for about 10-15 minutes to set.
  4. Once set, cut into squares and enjoy your healthy fudge!
