A decadent and guilt-free vegan treat that blends the tartness of raspberries with the richness of coconut and cocoa.
Ingredients

- 1 cup shredded coconut (organic, unsweetened)
- 1/2 cup unsweetened cocoa powder
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup or agave syrup
- 1 cup fresh or frozen raspberries
- 1 tsp vanilla extract
- A pinch of salt
Instructions
- In a high-speed blender, combine the shredded coconut, cocoa powder, melted coconut oil, maple syrup, raspberries, vanilla extract, and salt. Blend until smooth and creamy, about 2-3 minutes.
- Pour the mixture into a lined 8×8 baking dish and spread it evenly.
- Place the dish in the freezer for about 10-15 minutes to set.
- Once set, cut into squares and enjoy your healthy fudge!
Notes
Store any leftovers in an airtight container in the fridge for up to a week or in the freezer for up to three months. Feel free to customize with different nut butters or fruits.
