Ingredients
Scale
- 1/2 cup non-dairy milk (such as almond or soy, room temperature)
- 1/3 cup pumpkin puree (fresh or canned)
- 4 tbsp granulated sugar
- 1 tsp active yeast
- 2 tbsp safflower oil or refined coconut oil (melted)
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- A generous pinch of nutmeg
- 3/4 cup unbleached all-purpose flour (+1 to 2 tbsp more if needed)
- 2 tbsp almond flour (or 1 tbsp more all-purpose flour)
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 4 tbsp cane sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease your donut pan.
- Heat the non-dairy milk in a small saucepan until hot, about 1-2 minutes.
- In a large bowl, mix the hot non-dairy milk, pumpkin puree, sugar, melted oil, and vanilla extract until well combined.
- Sprinkle in the active yeast and mix until incorporated.
- In a separate bowl, whisk together the all-purpose flour, almond flour, pumpkin pie spice, nutmeg, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Let the batter rest for 10-15 minutes to allow the yeast to activate.
- Spoon the batter into the greased donut pan, filling each cavity about 3/4 full.
- Let the filled pan sit for another 10 minutes.
- Bake the donuts for 11-12 minutes or until golden and a toothpick comes out clean.
- Cool in the pan for 5 minutes before removing. Toss warm donuts in cinnamon sugar topping.
