Description

A delightful vegan twist on classic pecan bars, made with wholesome ingredients that are delicious and easy to prepare.


Ingredients

  • 1 cup pecans, chopped
  • 1 cup oat flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond milk
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine the oat flour, brown sugar, salt, and baking soda.
  3. In another bowl, whisk together the melted coconut oil, maple syrup, almond milk, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Fold in the chopped pecans.
  6. Pour the batter into the lined baking pan and spread evenly.
  7. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  8. Let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes
