- 1 cup pecans, chopped
- 1 cup oat flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup almond milk
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine the oat flour, brown sugar, salt, and baking soda.
- In another bowl, whisk together the melted coconut oil, maple syrup, almond milk, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Fold in the chopped pecans.
- Pour the batter into the lined baking pan and spread evenly.
- Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
These bars can be enjoyed on their own, with vegan ice cream, or alongside tea. You can also customize them by adding chocolate chips or different nuts.
