- 1 cup stelline or pastina pasta
- 2 ¼ cups vegan chicken broth or vegetable broth
- 3 tablespoons vegan butter
- ⅓ cup grated vegan parmesan cheese
- Fresh cracked pepper to taste
- Finely chopped fresh parsley for garnish
- ¾ cup water
- ¼ cup raw cashews or sunflower seeds
- 3 tablespoons nutritional yeast
- ½ teaspoon granulated onion
- ½ teaspoon granulated garlic
- ½ teaspoon salt, to taste
Instructions
- Boil the stelline pasta in salted water over medium-high heat for 3-5 minutes until ‚al dente.‘
- In a blender, combine raw cashews, nutritional yeast, granulated onion, granulated garlic, and salt, adding water and blend until smooth.
- Melt vegan butter in a saucepan over medium heat, add broth and cashew blend, and simmer for about 2 minutes.
- Drain the pasta and stir it slowly into the saucepan; cook for an additional minute.
- Season with pepper, stir in vegan parmesan cheese, and garnish with parsley.
Notes
For a creamier texture, ensure vegan butter is at room temperature. Can substitute cashews with sunflower seeds for a nut-free option.
