Ingredients

  • 1 cup mushrooms, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14 ounces)
  • 2 teaspoons thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the diced onion, minced garlic, sliced carrots, and chopped celery. Sauté until the vegetables are soft, about 5-7 minutes.
  3. Stir in the chopped mushrooms, lentils, thyme, cumin, salt, and pepper. Cook for another 2-3 minutes until the mushrooms start to soften.
  4. Add the can of diced tomatoes and the vegetable broth. Bring to a boil, stirring occasionally.
  5. Reduce the heat to a simmer and cover the pot. Let it simmer for 25-30 minutes, or until the lentils are tender.
  6. Taste and adjust the seasoning as needed.
