Description
A plant-based twist on the classic General Tso’s dish, featuring chewy soy curls in a tangy sauce.
Ingredients

- 4 oz dried soy curls
- 3/4 cup warm water or veggie broth
- 3 to 4 tbsp sugar or coconut sugar
- 1/4 cup low-sodium soy sauce
- 2 tsp mirin
- 2–3 tbsp rice vinegar
- 1.5 tsp toasted sesame oil
- 2 tsp sambal oelek chile paste (optional)
- 2 tsp grated fresh ginger
- 3 cloves minced garlic
- 1 tsp oil (safflower or sesame)
- 2 cloves of garlic (chopped)
- 1/4 cup chopped green onions
- 1/2 red bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1 cup zucchini or carrots
- 1 tbsp cornstarch
Instructions
- In a bowl, combine warm water or veggie broth with soy sauce, sugar, mirin, rice vinegar, sesame oil, sambal oelek, grated ginger, and minced garlic. Reserve 1/2 cup of the marinade.
- Add the dried soy curls to the marinade and let them soak for 10-15 minutes.
- Heat a skillet over medium-high heat and add preferred oil.
- Sauté chopped garlic and green onion in hot oil for about 30 seconds.
- Add marinated soy curls to the skillet and cook for about 4-5 minutes.
- Add sliced peppers and any additional vegetables, cooking for 2 minutes.
- In a small bowl, mix reserved marinade with cornstarch and water until smooth; pour over soy curl mixture.
- Cover and cook for an additional 3-4 minutes, stirring until sauce thickens.
- Serve over rice with garnishes of green onions and sesame seeds.
Notes
For maximum flavor, marinate soy curls overnight. Customizable with your favorite vegetables and spice levels.
