Description

A plant-based twist on the classic General Tso’s dish, featuring chewy soy curls in a tangy sauce.


Ingredients

  • 4 oz dried soy curls
  • 3/4 cup warm water or veggie broth
  • 3 to 4 tbsp sugar or coconut sugar
  • 1/4 cup low-sodium soy sauce
  • 2 tsp mirin
  • 23 tbsp rice vinegar
  • 1.5 tsp toasted sesame oil
  • 2 tsp sambal oelek chile paste (optional)
  • 2 tsp grated fresh ginger
  • 3 cloves minced garlic
  • 1 tsp oil (safflower or sesame)
  • 2 cloves of garlic (chopped)
  • 1/4 cup chopped green onions
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1 cup zucchini or carrots
  • 1 tbsp cornstarch

Instructions

  1. In a bowl, combine warm water or veggie broth with soy sauce, sugar, mirin, rice vinegar, sesame oil, sambal oelek, grated ginger, and minced garlic. Reserve 1/2 cup of the marinade.
  2. Add the dried soy curls to the marinade and let them soak for 10-15 minutes.
  3. Heat a skillet over medium-high heat and add preferred oil.
  4. Sauté chopped garlic and green onion in hot oil for about 30 seconds.
  5. Add marinated soy curls to the skillet and cook for about 4-5 minutes.
  6. Add sliced peppers and any additional vegetables, cooking for 2 minutes.
  7. In a small bowl, mix reserved marinade with cornstarch and water until smooth; pour over soy curl mixture.
  8. Cover and cook for an additional 3-4 minutes, stirring until sauce thickens.
  9. Serve over rice with garnishes of green onions and sesame seeds.

Notes

For maximum flavor, marinate soy curls overnight. Customizable with your favorite vegetables and spice levels.
