- 8 oz pasta of choice
- 1 small head of garlic, minced or sliced thinly
- 1/2 bunch green onions, sliced (white and green parts separated)
- 1/2 cup canned coconut milk
- 3 tbsp reduced sodium tamari or soy sauce
- 1 tsp hoisin sauce (optional)
Instructions
- Begin cooking your pasta in boiling salted water until al dente. Drain and return to pot to keep warm.
- Chop your garlic and green onions, keeping white and green parts separated.
- Heat a large skillet over medium-high heat. Add minced garlic with a tablespoon of water and cook until fragrant.
- Add the white parts of the green onion to the skillet and sauté for about 3 minutes.
- Pour in the coconut milk and tamari (or soy sauce) and heat for an additional minute.
- Stir in the green parts of the onion and mix well.
- Add the cooked pasta to the skillet and toss everything together.
- Serve hot, garnished with vegan Parmesan, chili flakes, or extra green onions.
Notes
For best results, use fresh ingredients and avoid burning the garlic. Leftovers can be refrigerated in an airtight container for up to 5 days.
