A delicious and nourishing vegan soup made with garlic and chickpeas, perfect for cozy nights.
Ingredients

- 1 Tbsp olive oil, plus more for drizzling
- 3 large garlic cloves, minced
- 1 tsp paprika
- 1 tsp dried rosemary
- ½ tsp dried thyme
- ¼ tsp chili flakes
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 large potato, diced
- 2 cups low-sodium vegetable broth
- Salt and black pepper, to taste
Instructions
- Pour one can of chickpeas (including the liquid) into a blender and purée until smooth.
- Heat the olive oil in a large pot over medium heat. Add the minced garlic and sauté for about 1 minute.
- Add the puréed chickpeas, the second can of drained chickpeas, diced potato, paprika, rosemary, thyme, and chili flakes. Stir thoroughly.
- Pour in the vegetable broth and stir again.
- Bring the soup to a boil, then reduce the heat and let it simmer for 25 minutes.
- Taste and adjust seasoning if needed. Serve hot with a drizzle of olive oil.
