Ingredients

  • 1 Tbsp olive oil, plus more for drizzling
  • 3 large garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 large potato, diced
  • 2 cups low-sodium vegetable broth
  • Salt and black pepper, to taste

Instructions

  1. Pour one can of chickpeas (including the liquid) into a blender and purée until smooth.
  2. Heat the olive oil in a large pot over medium heat. Add the minced garlic and sauté for about 1 minute.
  3. Add the puréed chickpeas, the second can of drained chickpeas, diced potato, paprika, rosemary, thyme, and chili flakes. Stir thoroughly.
  4. Pour in the vegetable broth and stir again.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 25 minutes.
  6. Taste and adjust seasoning if needed. Serve hot with a drizzle of olive oil.
