Ingredients

- 2 cups plant milk (almond, soy, or coconut)
- 1/3 cup cornstarch
- 1/2 cup sugar (or maple syrup/agave nectar)
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a medium saucepan, whisk together the plant milk, cornstarch, sugar, vanilla extract, and salt until smooth.
- Place the saucepan over medium heat and stir continuously for 5-7 minutes until the mixture thickens and bubbles appear.
- Remove from heat once thickened to pudding consistency.
- Pour the custard into serving dishes and let it cool for a few minutes before refrigerating for 2-4 hours to set.
- Serve chilled and enjoy topped with fresh fruit, nuts, or chocolate sauce.
Notes
For the creamiest texture, use full-fat coconut milk. Can be customized with cocoa powder or fruit purees.
