- 2 cups all-purpose flour (unbleached or whole wheat)
- 1/4 cup granulated sugar (organic cane sugar recommended)
- 1/2 teaspoon salt
- 1 packet instant yeast (about 2 1/4 teaspoons)
- 1/2 cup warm almond milk
- 1/4 cup unsweetened applesauce
- 1/4 cup melted vegan butter
- 1 tablespoon cinnamon
- 1/2 cup brown sugar
Instructions
- In a bowl, combine warm almond milk, granulated sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a separate bowl, whisk together the flour and salt.
- Add the yeast mixture and applesauce to the flour. Stir until a rough dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour.
- Once risen, roll out the dough into a rectangle about 1/4-inch thick.
- Spread melted vegan butter over the dough, then sprinkle evenly with brown sugar and cinnamon.
- Roll the dough into a log, seal the seams, and cut into 12 slices.
- Arrange rolls in a greased baking dish, cover, and let rise for another 30 minutes.
- Preheat the oven to 350°F (175°C).
- Bake for 25-30 minutes until golden brown.
- Allow to cool slightly before serving.
Notes
For a thicker frosting, blend powdered sugar with vegan cream cheese and almond milk until smooth. Serve warm or drizzled with your favorite vegan frosting.
