  • 1/4 cup granulated sugar (organic cane sugar recommended)
  • 1/2 teaspoon salt
  • 1 packet instant yeast (about 2 1/4 teaspoons)
  • 1/2 cup warm almond milk
  • 1/4 cup unsweetened applesauce
  • 1/4 cup melted vegan butter
  • 1 tablespoon cinnamon
  • 1/2 cup brown sugar

Instructions

  1. In a bowl, combine warm almond milk, granulated sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a separate bowl, whisk together the flour and salt.
  3. Add the yeast mixture and applesauce to the flour. Stir until a rough dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour.
  6. Once risen, roll out the dough into a rectangle about 1/4-inch thick.
  7. Spread melted vegan butter over the dough, then sprinkle evenly with brown sugar and cinnamon.
  8. Roll the dough into a log, seal the seams, and cut into 12 slices.
  9. Arrange rolls in a greased baking dish, cover, and let rise for another 30 minutes.
  10. Preheat the oven to 350°F (175°C).
  11. Bake for 25-30 minutes until golden brown.
  12. Allow to cool slightly before serving.

Notes

For a thicker frosting, blend powdered sugar with vegan cream cheese and almond milk until smooth. Serve warm or drizzled with your favorite vegan frosting.
