Ingredients

- 2 medium-sized sweet potatoes (about 14 ounces or 400g)
- 3 cups creamy plant-based milk (oat, coconut, cashew, soy, or macadamia nut)
- 3 large, ripe frozen bananas
- 1/4 cup raw cacao powder or unsweetened cocoa powder
- 2 tablespoons maple syrup (optional)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger (optional)
- Optional garnishes: melted dark chocolate, vegan chocolate chips, coconut whipped cream, or nondairy whipped topping
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- Rinse and poke several holes in the skins of two medium-sized sweet potatoes to prevent them from bursting.
- Place them on a parchment paper-lined baking sheet and bake for 40-60 minutes until fork-tender.
- Once baked, allow them to cool slightly, then slide off the skins.
- In a high-powered blender, add the sweet potato flesh, plant-based milk, frozen bananas, cacao powder, maple syrup (if using), ground cinnamon, and ground ginger.
- Blend until smooth and creamy, stopping to scrape down the sides as necessary.
- Taste and adjust sweetness with more maple syrup if desired.
- Pour into your favorite glasses and garnish as desired.
Notes
Opt for organic sweet potatoes for best flavor. Ensure bananas are frozen beforehand for optimal texture.
