- 1 teaspoon espresso powder (optional)

- 1/4 cup sugar (coconut, pure cane, or date)
- 12 ounces dark chocolate (60% cocoa or semi-sweet)
- 1/3 cup coconut oil (melted)
- 1/2 cup chocolate stout
- 2 teaspoons vanilla extract
- 2 flax eggs (2 tablespoons flax meal + 5 tablespoons water)
- 1 cup organic powdered sugar (for rolling)
Instructions
- Start by mixing the flax eggs: In a small bowl, combine flax meal and water; let set for about 10 minutes.
- Mix the dry ingredients: In a large bowl, whisk together flour, cocoa powder, baking powder, salt, espresso powder, and sugar.
- Melt chocolate and coconut oil over low heat; stir frequently and mix in chocolate stout once melted.
- Combine wet ingredients: Stir in flax eggs and vanilla extract until fully combined.
- Combine wet and dry ingredients until just mixed; some lumps are okay for fudgy cookies.
- Chill the dough covered in the refrigerator for about 3 hours or overnight.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Shape the cookies by rolling dough into balls and coating with powdered sugar.
- Bake for 8 to 10 minutes until edges are set, center remains soft.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack.
Notes
Check cookies at the lower end of baking time to avoid overbaking. Use a cookie scoop for even sizing.
