  2. Using a stand mixer or a hand mixer, beat the aquafaba in a medium bowl until soft peaks form (about 10 minutes).
  3. Gradually add powdered sugar, vanilla extract, and salt while continuing to whip until stiff peaks form (another 5-7 minutes).
  4. Gently fold in the melted chocolate to the whipped aquafaba until no streaks remain.
  5. Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.
  6. Garnish with fresh berries, mint leaves, or coconut whipped cream before serving.
