- 1 cup aquafaba
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a double boiler over simmering water, melt the dark chocolate slowly. Stir until completely smooth and set aside to cool slightly (about 5 minutes).
- Using a stand mixer or a hand mixer, beat the aquafaba in a medium bowl until soft peaks form (about 10 minutes).
- Gradually add powdered sugar, vanilla extract, and salt while continuing to whip until stiff peaks form (another 5-7 minutes).
- Gently fold in the melted chocolate to the whipped aquafaba until no streaks remain.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.
- Garnish with fresh berries, mint leaves, or coconut whipped cream before serving.
Notes
Ensure your aquafaba is at room temperature for best results. Use high-quality dark chocolate for a richer flavor.
