Ingredients

  • 4 cups apples, peeled and sliced
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup rolled oats
  • 1 cup flour
  • 1/2 cup coconut oil or vegan butter, melted
  • 1/4 cup maple syrup or agave nectar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the sliced apples with brown sugar, lemon juice, cinnamon, ginger, cardamom, cloves, and salt in a large bowl. Let sit for 5 minutes.
  3. Spread the apple mixture in a greased baking dish.
  4. In another bowl, combine the oats, flour, melted coconut oil or vegan butter, and maple syrup until crumbly.
  5. Sprinkle the oat mixture over the apples evenly.
  6. Bake for 30-35 minutes, or until the topping is golden brown and apples are bubbly.
  7. Serve warm, optionally with vegan vanilla ice cream.
