- 1 tbsp olive oil
- 2 yellow onions, thinly sliced
- Water, for deglazing the pan
- 5 cloves garlic, sliced
- 2 tsp Italian seasoning
- 1/2 tsp red pepper flakes, optional
- 1/4 cup julienned sun-dried tomatoes
- 2 tbsp balsamic glaze
- 1 tbsp soy sauce
- 1/2 cup vegan cream
- 2 cups dry Orecchiette pasta
- 1/4 cup freshly minced parsley
- Salt and pepper to taste
Instructions
- Fill one large pot with water for the pasta and set it aside. Bring it to a boil over high heat.
- Heat a large skillet over medium heat, then add the olive oil. Once warm, toss in the sliced onions along with a pinch of salt. Sauté the onions for about 5 minutes until there are brown streaks.
- Add 1-2 tablespoons of water to the pan and deglaze, continuing to cook the onions for about 15 minutes until they turn a deep golden brown.
- Add sliced garlic, Italian seasoning, and red pepper flakes if using. Sauté for an additional 3-4 minutes.
- Meanwhile, salt the boiling water and add the pasta, cooking according to package instructions and reserving 1 cup of pasta water before draining.
- To the pan with caramelized onions, add sun-dried tomatoes, balsamic glaze, soy sauce, and vegan cream along with 1/2 cup of reserved pasta water. Stir well to combine.
- Add the drained pasta to the skillet and toss to coat, adding more reserved water if desired.
- Fold in freshly minced parsley and serve immediately.
Notes
Ensure to slice onions thinly for even cooking. This dish can be made ahead and reheated, and it keeps well for three days in the fridge.
