Ingredients

  • Olive oil for sautéing
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups vegetable broth
  • 2 cups broccoli florets
  • 1 cup unsweetened plant-based milk
  • 2 tablespoons nutritional yeast
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add a drizzle of olive oil. Once hot, throw in the chopped onion and minced garlic. Sauté for about 3-4 minutes, or until soft and fragrant.
  2. Stir in the diced potatoes, followed by the vegetable broth. Bring the mixture to a boil over high heat.
  3. Once boiling, reduce the heat to low and let it simmer for 10-12 minutes, or until the potatoes are fork-tender.
  4. Stir in the broccoli florets, cooking for an additional 5-7 minutes, or until vibrant green and tender.
  5. Remove the pot from heat. Blend the soup until smooth and creamy using an immersion blender.
  6. Stir in the plant-based milk and nutritional yeast, tasting and adjusting with salt and pepper as desired.
  7. Ladle the soup into bowls and enjoy while warm.

Notes

For extra creaminess, add a splash more plant-based milk or blend in some cashews.
