Ingredients

- 2 tsp coconut oil (or olive oil)
- 1/2 tsp cumin seeds
- 1 tsp mustard seeds
- 1 small red onion, chopped
- 1 large tomato, chopped
- 7 cloves garlic, minced
- 1 inch ginger, chopped fine
- 1/2 tsp turmeric
- 1/2 tsp cayenne/red chili powder
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp homemade garam masala
- 3 medium potatoes, chopped small
- 3/4 tsp salt
- 1+ cups water
- 1 cup peas (fresh or thawed)
- 1/4 cup chopped cilantro
Instructions
- Heat the oil in a large skillet over medium heat. Add the cumin and mustard seeds and sauté until they pop.
- Add chopped onions and cook until translucent.
- Blend tomato, garlic, and ginger into a puree and add to the skillet with spices. Cook until thickened.
- Stir in potatoes, salt, and water. Cover and cook until tender.
- Add peas, adjust salt and spices, and simmer until cooked through.
- Mix in cilantro, and serve hot.

Ensure to use fresh ingredients for maximum flavor. This recipe can be adapted with additional veggies or spices to suit your taste.
