- 1/4 cup oat flour

- 1/3 cup melted refined coconut oil
- 1/4 cup pure maple syrup
- 1 cup berries, fresh or frozen
- 1 1/2 tbsp pure maple syrup
- 1 tbsp water
- 1/2 tsp cornstarch
- 1/2 cup oat flour
- 1/4 cup oats
- 2 tbsp almond flour
- 1/4 cup melted refined coconut oil
- 1 tbsp pure maple syrup
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, oat flour, and salt.
- Add maple syrup, melted coconut oil, and vanilla extract to the flour mixture and stir until combined into a thick dough.
- Grease or line an 8×8 baking dish, and press the mixture evenly to create the crust.
- In a pot, combine berries, pure maple syrup, and water; heat and mash until softened.
- Add cornstarch and simmer for 5-10 minutes until thickened.
- In another bowl, mix oat flour, oats, almond flour, salt, melted coconut oil, maple syrup, and vanilla extract to create the crumble topping.
- Distribute the berry mixture over the crust, then sprinkle with the crumble topping.
- Bake for 25 minutes or until golden brown.
- Cool for 15-20 minutes before cutting into squares.
Notes
For the best texture, avoid overmixing and adjust the moisture in the berry mixture to prevent sogginess.
