A comforting twist on a classic breakfast favorite, this vegan banana French toast is simple to make and topped with delicious caramelized bananas.

- 1 loaf day-old rustic bread or sourdough, sliced
- 1 small to medium ripe banana
- 1/2 cup non-dairy milk (such as almond milk)
- 2 tbsp pure maple syrup
- 2 tbsp flour (unbleached white)
- 1/2 tsp vanilla extract
- 1 tsp oil (for cooking)
- 1/4 tsp nutmeg
- A pinch of salt and black pepper
- 2 ripe bananas, sliced (for caramelization)
- 2 tbsp coconut sugar or vegan brown sugar
- 2 tbsp non-dairy milk (for caramelization)
- A pinch of cinnamon or nutmeg (optional)
Instructions
- Blend all ingredients for the French Toast in a blender or bowl until smooth. Pour into a shallow bowl.
- Warm a skillet over medium heat, add oil for even coating.
- Dip slices of bread in the batter briefly on each side, allowing excess to drip off, then place on the skillet.
- Cook for 4 to 6 minutes on one side until golden brown, lowering heat if necessary.
- In another pan, combine sliced bananas, coconut sugar, and non-dairy milk over medium heat and cook for 3-4 minutes until soft and syrupy.
- Serve cooked French toast topped with caramelized bananas and a drizzle of maple syrup.
Notes
For gluten-free options, swap rustic bread with gluten-free bread. You can prepare the batter a night before and store it in the fridge.
