  • 2 tbsp pure maple syrup
  • 2 tbsp flour (unbleached white)
  • 1/2 tsp vanilla extract
  • 1 tsp oil (for cooking)
  • 1/4 tsp nutmeg
  • A pinch of salt and black pepper
  • 2 ripe bananas, sliced (for caramelization)
  • 2 tbsp coconut sugar or vegan brown sugar
  • 2 tbsp non-dairy milk (for caramelization)
  • A pinch of cinnamon or nutmeg (optional)

Instructions

  1. Blend all ingredients for the French Toast in a blender or bowl until smooth. Pour into a shallow bowl.
  2. Warm a skillet over medium heat, add oil for even coating.
  3. Dip slices of bread in the batter briefly on each side, allowing excess to drip off, then place on the skillet.
  4. Cook for 4 to 6 minutes on one side until golden brown, lowering heat if necessary.
  5. In another pan, combine sliced bananas, coconut sugar, and non-dairy milk over medium heat and cook for 3-4 minutes until soft and syrupy.
  6. Serve cooked French toast topped with caramelized bananas and a drizzle of maple syrup.

For gluten-free options, swap rustic bread with gluten-free bread. You can prepare the batter a night before and store it in the fridge.
