A warm and comforting vegan baked oatmeal dish that is easy to make and perfect for breakfast.
Ingredients

- 2 cups rolled oats
- 1 cup almond milk (or any plant-based milk)
- 1/2 cup maple syrup or agave syrup
- 1 ripe banana
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup mixed fruit (e.g., berries, chopped apples, or more bananas)
- 1/4 cup nuts (e.g., walnuts or almonds, chopped)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, combine the rolled oats, baking powder, and cinnamon, whisking until blended.
- In another bowl, mash the ripe banana, then add the almond milk, maple syrup, and vanilla extract. Stir until combined.
- Pour the wet mixture into the dry ingredients and stir until well combined.
- Gently fold in the mixed fruit and chopped nuts until evenly distributed.
- Pour the mixture into the prepared baking dish and spread it evenly. Bake for 30-35 minutes or until the top is golden.
- Let it cool for about 10 minutes before slicing and serving.
Notes
Serve warm topped with almond milk and nut butter. It can also be refrigerated for meal prep.
