Delicious Vegan Almond Cookie Bars featuring nutty almond flour, creamy almond paste, and a touch of sweetness from maple syrup, perfect for any occasion.


Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup almond paste or frangipane filling
  • 1/4 cup sliced almonds for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine almond flour, all-purpose flour, melted coconut oil, maple syrup, almond milk, vanilla extract, baking powder, and salt. Mix until a soft dough forms.
  3. Press half of the dough into the bottom of the greased baking dish.
  4. Spread the almond paste evenly over the dough layer.
  5. Crumble the remaining dough over the almond paste.
  6. Sprinkle the sliced almonds on top.
  7. Bake for 25-30 minutes, or until edges are golden brown.
  8. Cool in the dish for 10 minutes before transferring to a wire rack. Cut into bars and serve.

Notes

Store in an airtight container for up to a week, or freeze for longer storage. You can also substitute almond paste with nut butter or chocolate hazelnut spread.
