- 2 cans (28 ounces each) Whole Peeled Tomatoes
- 1/4 cup Extra Virgin Olive Oil
- 6 cloves Garlic (peeled and smashed)
- 1 pound Dry Spaghetti
- Pinch Red Pepper Flakes
- 1 teaspoon Coarse Salt
- 8 Fresh Basil Leaves
Instructions
- Place the whole peeled tomatoes in a colander over a bowl, gently squeeze to drain.
- Heat olive oil in a pot over medium heat. Add smashed garlic and sauté until golden, about 2 minutes.
- Add drained tomatoes to the pot, breaking them into bite-sized pieces.
- Let the tomatoes simmer for 10-15 minutes, stirring occasionally.
- Add red pepper flakes, salt, and basil leaves. Cook for an additional 5 minutes.
- Cook spaghetti in salted water until 2 minutes shy of al dente. Reserve 1/2 cup of pasta water before draining.
- Combine drained spaghetti with the sauce and cook together for 2-3 minutes.
- Plate and serve with grated Parmesan cheese and extra basil leaves as garnish.
Notes
Store leftovers in an airtight container for up to 4 days. The sauce can be made a day ahead for better flavor.
