Ingredients

  • 2 teaspoons olive oil
  • 1 medium onion, finely diced
  • 1 large carrot, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 400 grams (13.5 oz.) canned diced tomatoes
  • 750 ml (3 cups) vegetable broth
  • 350 grams (2 cups) cooked or canned chickpeas, drained and rinsed
  • 1 teaspoon sea salt, to taste
  • 100 grams (1 ½ cups) small whole grain pasta
  • 2 teaspoons herbes de Provence
  • ½ teaspoon black pepper, to taste

Instructions

  1. Heat a large soup pot over low heat with olive oil. Add onion, carrot, and garlic. Cook for about 15 minutes until fragrant and soft.
  2. Stir in tomato paste and cook for 5 minutes.
  3. Add canned tomatoes, vegetable broth, chickpeas, and sea salt. Cover and bring to a boil.
  4. Once boiling, reduce heat, cover, and simmer for 10 minutes.
  5. Uncover and add whole grain pasta. Cook for an additional 8-10 minutes until pasta is tender.
  6. Stir in herbes de Provence and black pepper. Adjust seasoning if necessary.
  7. Serve hot and enjoy your hearty Tomato Pasta Soup.
