Description
Tofu Bhurji is a delightful Indian scramble made with crumbled tofu, aromatic spices, and fresh vegetables, delivering a burst of flavors in every bite.

- 1 tbsp oil (coconut or olive oil)
- ½ tsp cumin seeds
- ½ tsp fennel seeds (optional)
- 396 g block of firm tofu (pressed)
- 2 medium onions, chopped
- 2 green chilies, chopped
- ½ tbsp grated garlic
- 1 tsp grated ginger
- 1 bell pepper, chopped
- 1 large tomato, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- ¼ tsp ground turmeric
- 2 tsp Kashmiri chili powder
- ½ juice from a lemon
- Salt, to taste
- 1/8 tsp ground cinnamon (optional)
- ¼ cup chopped coriander (for garnish)
Instructions
- Heat oil in a large pan over medium heat, add cumin and fennel seeds, and cook until fragrant.
- Add chopped onions and green chilies, and sauté until onions are translucent and golden.
- Stir in grated garlic and ginger, cooking until fragrant.
- Add chopped bell pepper and tomato, cooking until softened.
- Incorporate ground spices and salt, letting them bloom for a couple of minutes.
- Crumble in the tofu and mix well, cooking until heated through.
- Finish by squeezing lemon juice, stirring in coriander and cinnamon.
- Serve with warm bread, avocado, or vegan mayo.
Notes
Use fresh spices for the best flavor; leftovers can be stored in the fridge for up to 3 days.
