Description

Tofu Bhurji is a delightful Indian scramble made with crumbled tofu, aromatic spices, and fresh vegetables, delivering a burst of flavors in every bite.


Ingredients

  • 1 tbsp oil (coconut or olive oil)
  • ½ tsp cumin seeds
  • ½ tsp fennel seeds (optional)
  • 396 g block of firm tofu (pressed)
  • 2 medium onions, chopped
  • 2 green chilies, chopped
  • ½ tbsp grated garlic
  • 1 tsp grated ginger
  • 1 bell pepper, chopped
  • 1 large tomato, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ¼ tsp ground turmeric
  • 2 tsp Kashmiri chili powder
  • ½ juice from a lemon
  • Salt, to taste
  • 1/8 tsp ground cinnamon (optional)
  • ¼ cup chopped coriander (for garnish)

Instructions

  1. Heat oil in a large pan over medium heat, add cumin and fennel seeds, and cook until fragrant.
  2. Add chopped onions and green chilies, and sauté until onions are translucent and golden.
  3. Stir in grated garlic and ginger, cooking until fragrant.
  4. Add chopped bell pepper and tomato, cooking until softened.
  5. Incorporate ground spices and salt, letting them bloom for a couple of minutes.
  6. Crumble in the tofu and mix well, cooking until heated through.
  7. Finish by squeezing lemon juice, stirring in coriander and cinnamon.
  8. Serve with warm bread, avocado, or vegan mayo.

Notes

Use fresh spices for the best flavor; leftovers can be stored in the fridge for up to 3 days.
