Ingredients

  • 1 cup basmati rice
  • 1 can (14 oz) tikka masala sauce
  • 1 block (14 oz) firm tofu, drained and cubed
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup peas
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened (about 5 minutes).
  3. Add the basmati rice, tikka masala sauce, and vegetable broth to the same baking dish. Stir until well combined.
  4. Spread the cubed tofu and peas over the rice mixture. Season with salt and pepper.
  5. Cover the baking dish with aluminum foil and bake for 25-30 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the top is crispy and golden brown.
  7. Garnish with freshly chopped cilantro and serve.

Notes

Press tofu for best results. Can store leftovers in an airtight container for up to 5 days.
