- 1 cup basmati rice
- 1 can (14 oz) tikka masala sauce
- 1 block (14 oz) firm tofu, drained and cubed
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup peas
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened (about 5 minutes).
- Add the basmati rice, tikka masala sauce, and vegetable broth to the same baking dish. Stir until well combined.
- Spread the cubed tofu and peas over the rice mixture. Season with salt and pepper.
- Cover the baking dish with aluminum foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes until the top is crispy and golden brown.
- Garnish with freshly chopped cilantro and serve.
Notes
Press tofu for best results. Can store leftovers in an airtight container for up to 5 days.
