- 4 chicken thighs (bone-in and skin-on or boneless)
- 1 cup Thai sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- Salt and pepper to taste
Instructions
- Season the chicken thighs lightly with salt and pepper.
- Place the chicken thighs in the slow cooker in a single layer.
- Pour the Thai sweet chili sauce over the chicken, then add soy sauce, minced garlic, and minced ginger.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until chicken is tender.
- For a thicker glaze, remove chicken after cooking, simmer sauce for 5 to 7 minutes, then coat the chicken.
- Broil coated thighs for 2 to 3 minutes to caramelize the edges.
Notes
Serve over steamed rice or roasted veggies. For lower sugar, mix sweet chili sauce with low sugar hoisin.
