Ingredients

  • 4 chicken thighs (bone-in and skin-on or boneless)
  • 1 cup Thai sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs lightly with salt and pepper.
  2. Place the chicken thighs in the slow cooker in a single layer.
  3. Pour the Thai sweet chili sauce over the chicken, then add soy sauce, minced garlic, and minced ginger.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until chicken is tender.
  5. For a thicker glaze, remove chicken after cooking, simmer sauce for 5 to 7 minutes, then coat the chicken.
  6. Broil coated thighs for 2 to 3 minutes to caramelize the edges.
