Description

Ingredients

  • 34 Sweet Onions (such as Vidalia, Maui, Walla Walla, or Texas Sweet)
  • 4 tbsp butter (sliced into 8 pats)
  • ½ tsp coarse salt (or to taste)
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • ¼ tsp smoked paprika
  • Pinch of cayenne pepper (optional)
  • 1 cup freshly shredded mozzarella cheese
  • 1 cup freshly shredded cheddar cheese
  • ½ cup freshly shredded Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (175°C) and coat a 9×13-inch baking dish with nonstick cooking spray.
  2. Slice the onions into ¼-inch thick rounds, then separate the rings and spread them evenly in the prepared baking dish.
  3. Combine the seasonings in a small bowl and sprinkle over the onions evenly.
  4. Distribute the pats of butter across the seasoned onions.
  5. Sprinkle the cheeses over the onions in the order: mozzarella, cheddar, and then Parmesan.
  6. Bake uncovered for 35-40 minutes until the cheese is browned and bubbling. If the onions aren’t soft, cover with foil and bake for an additional 15 minutes.
  7. Serve hot and enjoy!

Notes

For best results, caramelize onions prior to baking for enhanced flavor. Leftovers can be stored for up to 4 days in the fridge or frozen for 2 months.
