  • 1/2 teaspoon red pepper flakes, plus more to taste
  • 2 tablespoons red wine vinegar
  • 1 teaspoon pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • Kosher salt and black pepper to taste
  • 23 tablespoons pine nuts, toasted
  • 23 tablespoons golden raisins
  • One handful of fresh basil leaves, slivered

Instructions

  1. Smash the cucumbers, place them in a colander, sprinkle with salt, and let them rest for 15 minutes to 1 hour.
  2. Toast the pine nuts in a dry skillet over medium-low heat for about 3-5 minutes.
  3. Prepare the vinaigrette by combining garlic, red pepper flakes, red wine vinegar, and maple syrup in a bowl. Slowly whisk in the olive oil.
  4. Combine drained cucumbers and sliced peaches in a large bowl. Toss with the vinaigrette and top with toasted pine nuts, golden raisins, and slivered basil.
  5. Serve immediately or let it chill for 30 minutes before serving.
