Description
Delightful sweet potato waffles that are fluffy, golden brown, and packed with nutrition, perfect for breakfast or brunch.
Ingredients
Scale
- 1 cup mashed sweet potatoes (about 1 medium sweet potato, baked and cooled)
- 1 cup almond flour
- 2 large eggs
- 1 teaspoon baking powder
- Salt to taste
Instructions
- In a mixing bowl, combine the mashed sweet potatoes, almond flour, eggs, baking powder, and salt. Use a whisk to mix until well combined, about 3-4 minutes.
- Preheat your waffle maker according to the manufacturer’s instructions.
- Pour approximately ½ cup of batter into the preheated waffle maker and cook until golden brown and crispy, about 4-5 minutes.
- Remove the waffles gently and serve warm with your favorite toppings.
Notes
Make sure your sweet potatoes are mashed smooth; lumps can lead to uneven waffles. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
