- 2 cups all-purpose flour
- 1/4 cup almond flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon Italian herbs
- 1/2 teaspoon pepper flakes
- 2 tablespoons chopped sun-dried tomatoes
- 2 tablespoons chopped green onion
- 1/2 cup chilled non-dairy milk (or more, if needed)
- 1 teaspoon apple cider vinegar
- 2 tablespoons cold vegan cream cheese
- 1 tablespoon cold maple syrup
- 1/2 cup frozen spinach (thawed)
- 1/2 cup vegan cheese shreds
- Cheese or sesame seeds for topping (optional)
Instructions
- Preheat your oven to 400°F (205°C).
- In a mixing bowl, combine all-purpose flour, almond flour, baking powder, baking soda, salt, Italian herbs, and pepper flakes.
- Make a well in the center of your dry mixture.
- In a separate bowl, whisk together the non-dairy milk and vinegar; let it sit.
- Add cream cheese, maple syrup, spinach, sun-dried tomatoes, green onion, and vegan cheese to the well of dry ingredients.
- Gradually mix in the chilled non-dairy milk until you achieve a scone-like dough.
- Flatten the dough into a 1-inch thick disk and cut into desired shapes.
- Chill the scones in the freezer for about 10 minutes.
- Brush the tops with oil or melted vegan butter, or a mixture of non-dairy milk and maple syrup.
- Bake for 20 to 22 minutes until golden brown.
- Cool on the baking sheet for a few minutes before serving.
Notes
Best enjoyed fresh but can be stored in an airtight container for 2 days or frozen for up to 3 months.
