Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup almond flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon pepper flakes
  • 2 tablespoons chopped sun-dried tomatoes
  • 2 tablespoons chopped green onion
  • 1/2 cup chilled non-dairy milk (or more, if needed)
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons cold vegan cream cheese
  • 1 tablespoon cold maple syrup
  • 1/2 cup frozen spinach (thawed)
  • 1/2 cup vegan cheese shreds
  • Cheese or sesame seeds for topping (optional)

Instructions

  1. Preheat your oven to 400°F (205°C).
  2. In a mixing bowl, combine all-purpose flour, almond flour, baking powder, baking soda, salt, Italian herbs, and pepper flakes.
  3. Make a well in the center of your dry mixture.
  4. In a separate bowl, whisk together the non-dairy milk and vinegar; let it sit.

  6. Gradually mix in the chilled non-dairy milk until you achieve a scone-like dough.
  7. Flatten the dough into a 1-inch thick disk and cut into desired shapes.
  8. Chill the scones in the freezer for about 10 minutes.
  9. Brush the tops with oil or melted vegan butter, or a mixture of non-dairy milk and maple syrup.
  10. Bake for 20 to 22 minutes until golden brown.
  11. Cool on the baking sheet for a few minutes before serving.
