Description
A delightful and healthier homemade treat that combines creamy yogurt, chewy dates, crunchy nuts, and a decadent dark chocolate shell.
Ingredients
Scale
- 12 dates, pitted and roughly chopped
- 1 cup thick yogurt (Greek or coconut recommended)
- 1/4 cup nut butter of choice
- 1/2 cup chopped nuts (peanuts, almonds, or walnuts)
- 1 1/4 cup dark chocolate chips
- 1 teaspoon hard coconut oil
- Pinch of flaky sea salt
Instructions
- In a medium bowl, add the Greek or coconut yogurt and your choice of nut butter. Mix until smooth.
- Stir in the chopped dates and nuts until well combined.
- Line a sheet pan with parchment paper. Portion out the mixture into about 6 evenly sized clusters.
- Place the sheet pan in the freezer for 1-2 hours or overnight, until hardened.
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Heat in 30-second intervals, stirring until melted and smooth.
- Remove the clusters from the freezer and dunk each one into the melted chocolate, ensuring they’re coated.
- Before the chocolate sets, sprinkle a pinch of flaky sea salt over each cluster.
- Return the chocolate-coated clusters to the freezer for an additional 10-15 minutes, until the chocolate is fully set.
- Serve immediately and enjoy!
Notes
For a dairy-free version, use coconut yogurt and nut butter. They can be kept in an airtight container in the freezer for up to 2 months.
