Description

A comforting dish of vibrant veggies and creamy smashed white beans flavored with smoky Cajun spices, perfect for weeknight dinners or gatherings.


Ingredients

  • 15-ounce can of cannellini or great northern beans, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3/4 cup chopped red onion
  • 1 cup sliced zucchini
  • 3 to 4 ounces sliced or quartered mushrooms
  • 1/2 cup corn, fresh or frozen
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable or olive oil
  • 2 teaspoons lime juice
  • Zest of 1/2 lime
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 3 chipotle peppers in adobo sauce (to taste)
  • 1/2 cup non-dairy yogurt
  • 1 tablespoon maple syrup
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Optional: vegan cheese and seeds for topping

Instructions

  1. Preheat the oven to 415°F (213°C) and line a baking sheet with parchment paper.
  2. Drain the white beans and spread them evenly on the baking sheet. Gently smash them with a fork or the back of a spoon.
  3. Toss in the chopped bell peppers, red onion, zucchini, mushrooms, corn, and minced garlic. Drizzle with oil and lime juice.
  4. In a small bowl, mix lime zest, Cajun seasoning, paprika, thyme, and salt. Sprinkle over the veggies and beans, tossing to coat.
  5. Bake for about 25 minutes, stirring gently around the 17-minute mark, until veggies are golden and tender.
  6. While baking, prepare the dressing by blending chipotle peppers, non-dairy yogurt, maple syrup, garlic powder, nutritional yeast, salt, and lime juice until smooth.
  7. To serve, add chopped lettuce to bowls, top with roasted veggies and beans, drizzle with creamy dressing, and add any desired toppings.

Notes

Great for meal prep and leftovers. Can be served alone, in tortillas, or with quinoa or rice.
