- 3/4 cup freshly grated Parmesan cheese, divided
- 1 pound baby carrots
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon coarse salt
- 1 teaspoon pepper
- 1/4 teaspoon smoked paprika
- Fresh chopped parsley, for garnish
- Dipping sauce options: tzatziki sauce, ranch, or sour cream
Instructions
- Preheat your oven to 425°F (220°C).
- Line a large sheet pan with parchment paper and sprinkle half of the Parmesan cheese on top.
- In a large microwave-safe bowl, add the baby carrots and enough water to cover them. Microwave on high for 10-12 minutes until fork-tender. Drain and pat dry.
- In a mixing bowl, combine the drained carrots with olive oil, minced garlic, salt, pepper, and smoked paprika. Toss until well coated.
- Place the carrots on the prepared sheet pan and smash them with the bottom of a glass to flatten.
- Sprinkle the remaining Parmesan cheese over the smashed carrots. Roast in the oven for about 20 minutes, or until crispy and golden brown.
- Garnish with chopped parsley and serve hot with dipping sauces.
Notes
Ensure the Parmesan cheese is at room temperature for better melting. If dietary restrictions apply, consider plant-based cheese alternatives.
