Ingredients

  • 3/4 cup freshly grated Parmesan cheese, divided
  • 1 pound baby carrots
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon coarse salt
  • 1 teaspoon pepper
  • 1/4 teaspoon smoked paprika
  • Fresh chopped parsley, for garnish
  • Dipping sauce options: tzatziki sauce, ranch, or sour cream

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a large sheet pan with parchment paper and sprinkle half of the Parmesan cheese on top.
  3. In a large microwave-safe bowl, add the baby carrots and enough water to cover them. Microwave on high for 10-12 minutes until fork-tender. Drain and pat dry.
  4. In a mixing bowl, combine the drained carrots with olive oil, minced garlic, salt, pepper, and smoked paprika. Toss until well coated.
  5. Place the carrots on the prepared sheet pan and smash them with the bottom of a glass to flatten.
  6. Sprinkle the remaining Parmesan cheese over the smashed carrots. Roast in the oven for about 20 minutes, or until crispy and golden brown.
  7. Garnish with chopped parsley and serve hot with dipping sauces.
