Description

A fall-apart tender slow cooker pork loin paired with a sweet and savory sauce, perfect for family dinners and meal prep.


Ingredients

  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1 large onion, sliced
  • 4 lb pork loin, cut in half as needed
  • 3 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder (optional)
  • 2 tbsp avocado oil
  • 1/4 cup balsamic vinegar
  • 3 tbsp honey
  • 4 tsp minced garlic (4 large cloves)
  • 2 tbsp butter

Instructions

  1. Combine the chicken broth, soy sauce, balsamic vinegar, honey, and minced garlic in a bowl. Whisk until well mixed.
  2. Pat the pork loin dry and season all sides with salt, pepper, garlic powder, and onion powder.
  3. Heat avocado oil in a skillet over medium-high heat and sear the pork (optional).
  4. Place sliced onions at the bottom of the slow cooker, then the pork. Pour the sauce over it.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the pork is fork-tender.
  6. Remove the pork, let it rest, then shred or slice and serve with sauce.

Notes

For a flavor kick, add crushed red pepper flakes to the sauce. Store leftovers in airtight containers for up to 4 days.
