Ingredients

- 4 pieces boneless, skinless chicken breasts (about 1.5–2 pounds total)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 0.5–1 teaspoon salt
- 1 cup low-sodium chicken broth
Instructions
- In a small bowl, combine garlic powder, onion powder, oregano, thyme, salt, and pepper.
- Pat the chicken breasts dry and rub the seasoning mixture over all surfaces.
- Optionally, sear the chicken in heated olive oil for 1–2 minutes per side.
- Place the seared chicken in the slow cooker and pour chicken broth around it.
- Cook on low for 6–7 hours or high for 3–4 hours until flaked easily with a fork.
- Shred the chicken and adjust seasoning as needed before serving.
Notes
Searing the chicken is optional but adds depth to flavor and color. Store cooled chicken in an airtight container for up to 4 days or freeze for up to 3 months.
