Description

A comforting and versatile tamale pie with a savory filling and a fluffy cornbread topping.


Ingredients

  • 12 tablespoons olive oil
  • 1 onion, diced
  • 4 garlic cloves, rough chopped
  • 1 lb ground meat (chicken, turkey, beef, or vegetarian)
  • 1 red bell pepper, diced
  • 14-ounce can black beans, drained
  • 1 cup fresh or frozen corn
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon dried Mexican oregano
  • 1 ½ cups enchilada sauce
  • ¼½ cup water
  • 4-ounce can of drained green chilies (optional)
  • 12 tablespoons chopped fresh cilantro (optional)
  • 1 cup grated cheese (optional)
  • 1 cup cornmeal
  • ¼ cup flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • 1 large egg
  • ⅔ cup milk or plant-based milk
  • 2 tablespoons olive oil or melted butter
  • 1 jalapeño, sliced (optional)
  • Fresh cilantro for garnish
  • Sour cream or avocado for serving
  • Hot sauce for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet or Dutch oven, heat olive oil over medium heat.
  3. Sauté diced onion and garlic until softened, about 3-5 minutes.
  4. Add ground meat and diced red bell pepper, cook until browned, about 7-10 minutes.
  5. Stir in corn, black beans, salt, chili powder, coriander, cumin, oregano, enchilada sauce, and water, and let simmer for 5 minutes.
  6. In a bowl, mix cornmeal, flour, baking powder, sugar, and salt.
  7. In another bowl, whisk together egg, milk, and olive oil or butter, then combine wet and dry mixtures until just mixed.
  8. Pour cornbread batter over filling, top with jalapeño and cheese if desired.
  9. Bake for 20-25 minutes until cornbread topping is golden brown.
  10. Allow to cool slightly before slicing and serving with garnishes.

Notes

Customize with different meats or vegetables. Can be made ahead and stored in the fridge.
