A flavorful vegan dish featuring creamy butter beans paired with vibrant pesto made from fresh basil, slivered almonds, and hemp seeds.

- 2 tablespoons slivered almonds
- 2 tablespoons hemp seeds
- 2 cups cherry tomatoes
- ½ cup fresh basil
- ½ teaspoon pepper flakes
- ¼ teaspoon salt
- 1 clove garlic
- 2 tablespoons vegan parmesan
- 2 tablespoons vegan mozzarella
- 2 teaspoons olive oil (optional)
- 1 tablespoon nutritional yeast
- 2 teaspoons extra virgin olive oil
- 8 basil leaves (for garnish)
- 1 clove garlic (thinly sliced)
- 1 teaspoon oil
- ½ cup chopped or sliced onion
- ½ teaspoon salt (divided)
- ½ teaspoon dried oregano (optional)
- 1 cup water (or stock, more if needed)
- 15 ounces can of butter beans (drained and rinsed or 1 ½ cups cooked butter beans)
Instructions
- In a food processor, combine the slivered almonds, hemp seeds, cherry tomatoes, fresh basil, pepper flakes, salt, garlic, vegan parmesan, and nutritional yeast. Pulse gently until well combined, but leave it a bit chunky.
- Drizzle in the olive oil while the processor runs, blending until smooth but slightly textured. Taste and adjust seasoning if necessary.
- In a small skillet, heat the oil over medium heat. Add the thinly sliced garlic and sauté until fragrant, about 1 minute.
- Toss in the basil leaves and fry for about 30 seconds until crispy. Remove and let drain on a paper towel.
- In a large skillet, sauté the onion over medium heat until translucent. Add the thinly sliced garlic and cook for another minute.
- Stir in the dried oregano, salt, and rinsed butter beans, mixing gently. Add water or stock as needed.
- Once the beans are heated through, fold in your prepared pesto and let it simmer for about 5 minutes. Drizzle with extra virgin olive oil before serving.
Notes
This dish can be made ahead; the pesto can be prepared in advance. Leftovers can be refrigerated for up to 3 days.
