Ingredients

  • 2 tablespoons slivered almonds
  • 2 tablespoons hemp seeds
  • 2 cups cherry tomatoes
  • ½ cup fresh basil
  • ½ teaspoon pepper flakes
  • ¼ teaspoon salt
  • 1 clove garlic
  • 2 tablespoons vegan parmesan
  • 2 tablespoons vegan mozzarella
  • 2 teaspoons olive oil (optional)
  • 1 tablespoon nutritional yeast
  • 2 teaspoons extra virgin olive oil
  • 8 basil leaves (for garnish)
  • 1 clove garlic (thinly sliced)
  • 1 teaspoon oil
  • ½ cup chopped or sliced onion
  • ½ teaspoon salt (divided)
  • ½ teaspoon dried oregano (optional)
  • 1 cup water (or stock, more if needed)
  • 15 ounces can of butter beans (drained and rinsed or 1 ½ cups cooked butter beans)

Instructions

  1. In a food processor, combine the slivered almonds, hemp seeds, cherry tomatoes, fresh basil, pepper flakes, salt, garlic, vegan parmesan, and nutritional yeast. Pulse gently until well combined, but leave it a bit chunky.
  2. Drizzle in the olive oil while the processor runs, blending until smooth but slightly textured. Taste and adjust seasoning if necessary.
  3. In a small skillet, heat the oil over medium heat. Add the thinly sliced garlic and sauté until fragrant, about 1 minute.
  4. Toss in the basil leaves and fry for about 30 seconds until crispy. Remove and let drain on a paper towel.
  5. In a large skillet, sauté the onion over medium heat until translucent. Add the thinly sliced garlic and cook for another minute.
  6. Stir in the dried oregano, salt, and rinsed butter beans, mixing gently. Add water or stock as needed.
  7. Once the beans are heated through, fold in your prepared pesto and let it simmer for about 5 minutes. Drizzle with extra virgin olive oil before serving.

Notes

This dish can be made ahead; the pesto can be prepared in advance. Leftovers can be refrigerated for up to 3 days.
