  • 6 cloves garlic (minced; fresh garlic is key for the best flavor)
  • 1 medium tomato (diced; use ripe heirloom for a burst of sweetness)
  • 1 tsp ground chipotle powder (adds smoky heat; adjust to taste)
  • 1½ tbsp chili powder or taco seasoning (the spice mixture, not ground cayenne)
  • lbs boneless, skinless chicken thighs (can substitute with chicken breasts, but thighs are juicier)

Instructions

  1. Sauté the aromatics: Heat the oil in a heavy skillet over medium-high heat. Once hot, add the chopped onions and 1 tsp of salt. Sauté until onions are golden and caramelized, about 10 minutes.
  2. Add garlic: Stir in the minced garlic and sauté for an additional minute until fragrant.
  3. Transfer to the slow cooker: Scrape the onion-garlic mixture into a 3-quart or larger Crock Pot™ Slow Cooker.
  4. Combine ingredients: Add the diced tomatoes, chili powder, ground chipotle, and the chicken thighs. Sprinkle with the remaining 1 tsp of salt.
  5. Slow cook: Cover and slow cook on low for 240 minutes.
  6. Shred the chicken: Use a fork to transfer the chicken to a cutting board. Allow the sauce to thicken by turning the slow cooker to high. Once the chicken is cool enough to handle, shred it with two forks into bite-sized pieces.
  7. Return to sauce: Mix the shredded chicken back into the sauce, stirring to coat evenly.

Notes
