A modern twist on family classic shredded chicken tacos, easy to prepare and delicious with robust flavors.

- 4 tbsp oil (canola or olive oil recommended for flavor)
- 2 medium onions (finely chopped; yellow onions or sweet onions work best)
- 2 tsp kosher salt (divided use, use sea salt if preferred)
- 6 cloves garlic (minced; fresh garlic is key for the best flavor)
- 1 medium tomato (diced; use ripe heirloom for a burst of sweetness)
- 1 tsp ground chipotle powder (adds smoky heat; adjust to taste)
- 1½ tbsp chili powder or taco seasoning (the spice mixture, not ground cayenne)
- 1½ lbs boneless, skinless chicken thighs (can substitute with chicken breasts, but thighs are juicier)
Instructions
- Sauté the aromatics: Heat the oil in a heavy skillet over medium-high heat. Once hot, add the chopped onions and 1 tsp of salt. Sauté until onions are golden and caramelized, about 10 minutes.
- Add garlic: Stir in the minced garlic and sauté for an additional minute until fragrant.
- Transfer to the slow cooker: Scrape the onion-garlic mixture into a 3-quart or larger Crock Pot™ Slow Cooker.
- Combine ingredients: Add the diced tomatoes, chili powder, ground chipotle, and the chicken thighs. Sprinkle with the remaining 1 tsp of salt.
- Slow cook: Cover and slow cook on low for 240 minutes.
- Shred the chicken: Use a fork to transfer the chicken to a cutting board. Allow the sauce to thicken by turning the slow cooker to high. Once the chicken is cool enough to handle, shred it with two forks into bite-sized pieces.
- Return to sauce: Mix the shredded chicken back into the sauce, stirring to coat evenly.
Notes
Be sure not to overcook the chicken to avoid dryness. Warm tortillas on a skillet for the best experience.
