Ingredients

  • 1 1/2 lbs Salmon fillets (6 x 4 ounce pieces)
  • 2 tablespoons Olive oil or unsalted butter, melted
  • 2 teaspoons Smoked paprika
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon Salt
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1/2 teaspoon Ground black pepper
  • 1/4 to 1/2 teaspoon Cayenne pepper (to taste)
  • 1 teaspoon Brown sugar (optional)
  • Lemon slices or lime juice for serving

Instructions

  1. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, oregano, thyme, black pepper, cayenne pepper, and brown sugar until well combined.
  2. Place the salmon fillets on a plate, skin side down and flesh side up. Pat them dry with paper towels and let them sit at room temperature for about 20 minutes.
  3. Lightly coat the salmon with olive oil or melted butter. Generously sprinkle the Cajun seasoning onto each fillet, pressing the spice blend in.
  4. Preheat a large skillet to medium-high heat, about 375°F (190°C).
  5. Once hot, place the salmon skin side up, seasoned side down. Cook for 2 to 3 minutes without moving it.
  6. Check for a dark brown crust, then flip the fillet.
  7. Lower the heat to medium and cook for another 5 to 6 minutes, or until cooked through with an internal temperature of 135°F (57°C).
  8. Remove the salmon and serve with lemon or lime.

Notes

For added flavor, consider serving with a creamy dill sauce or avocado salsa.
