Delicious homemade truffles made with dates, almond butter, and chocolate, topped with flaky salt, perfect for any occasion.
Ingredients

- 1 cup tightly packed pitted dates (about 16 dates)
- 1/4 cup almond butter
- 1/4 cup oat flour
- Pinch of salt
- 1/2 teaspoon vanilla extract
- 1 tablespoon solid coconut oil
- 1/2–3/4 cup chocolate chips or chopped chocolate
- Flaky salt to taste
Instructions
- Combine ingredients: Add dates, almond butter, oat flour, salt, vanilla, and coconut oil to a food processor. Blend until sticky, about 30-45 seconds.
- Shape the truffles: Roll the mixture into balls, about 1 1/2 tablespoons each, yielding around seven truffles.
- Chill the balls: Freeze the date balls for about 10 minutes.
- Melt the chocolate: Heat the chocolate chips in three 30-second intervals, stirring until smooth.
- Dip in chocolate: Coat each truffle in melted chocolate and place back on a pan.
- Sprinkle with flaky salt: Add a sprinkle of flaky salt on top of each truffle.
- Final chill: Return to freezer for another 10-20 minutes until chocolate hardens.
Notes
Store truffles in an airtight container for up to a week at room temperature or two weeks in the refrigerator. They freeze well for up to 3 months.
