A healthier twist on a classic dessert, this cheesecake combines full-fat cottage cheese with a luscious salted caramel drizzle for a light and fluffy treat.
Ingredients

- 1 1/4 cup full-fat cottage cheese
- 1/3 cup thick raw honey (or maple syrup for vegan)
- Pinch of salt
- 3 tablespoons corn starch or arrowroot powder
- 1 teaspoon vanilla extract
- 2 large eggs (room temperature)
- 8 medjool dates
- 2 tablespoons milk of choice
- 10 dates for date caramel
- Flaky salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, combine all ingredients except for the dates until smooth.
- Add the 8 dates and pulse until they are chopped but not fully blended.
- Pour the batter into a 6-inch springform pan lined with parchment paper.
- Cover with foil and bake for 50 minutes to 1 hour, removing foil after 20 minutes.
- Let cool in the pan for 20 minutes, then chill in the refrigerator for at least 2 hours.
- Blend 10 medjool dates with 2 tablespoons milk until smooth to make the date caramel.
- Once chilled, pour the date caramel on top and sprinkle with flaky salt.
Notes
For a vegan option, substitute eggs with flax eggs and ensure to use plant-based milk.
