A comforting one-pot meal of roasted salmon served on a bed of braised French green lentils, combining hearty flavors and wholesome ingredients.

- 4 salmon fillets
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup French green lentils
- 4 cups vegetable or chicken broth
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- Fresh herbs (such as thyme or parsley) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the lentils under cold water and drain.
- In a pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and carrots; sauté for about 5-7 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.
- Add the rinsed lentils and 4 cups of broth to the pot. Bring to a boil, then reduce to a simmer and cook for about 25-30 minutes. Season with salt and pepper to taste.
- While the lentils are simmering, season the salmon fillets with salt and pepper. In an oven-safe skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Sear the salmon for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and roast for about 10-12 minutes until cooked through.
- Serve the roasted salmon over the braised lentils and garnish with fresh herbs.
Notes
Leftovers can be stored in airtight containers in the fridge for up to 3 days. Make-ahead options available by preparing lentils a day in advance.
