Ingredients

  • 4 salmon fillets
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup French green lentils
  • 4 cups vegetable or chicken broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • Fresh herbs (such as thyme or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the lentils under cold water and drain.
  3. In a pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and carrots; sauté for about 5-7 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.
  4. Add the rinsed lentils and 4 cups of broth to the pot. Bring to a boil, then reduce to a simmer and cook for about 25-30 minutes. Season with salt and pepper to taste.
  5. While the lentils are simmering, season the salmon fillets with salt and pepper. In an oven-safe skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Sear the salmon for about 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and roast for about 10-12 minutes until cooked through.
  7. Serve the roasted salmon over the braised lentils and garnish with fresh herbs.

Notes

Leftovers can be stored in airtight containers in the fridge for up to 3 days. Make-ahead options available by preparing lentils a day in advance.
