Description
Transform radishes into a sweet and crispy side dish with this simple roasting recipe.
Ingredients
Scale
- 1 ½ pounds radishes
- 3 tablespoons olive oil (divided)
- 1 small orange (zested and juiced)
- 1 tablespoon apple cider vinegar (or white wine vinegar)
- 1 teaspoon honey (or maple syrup for a vegan version)
- ¼ teaspoon coarse salt
- Fresh cracked black pepper, to taste
- ½ tablespoon fresh chopped chives (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the radishes. Trim the ends and slice them in half lengthwise.
- Place the radishes on a rimmed baking sheet and drizzle 1 tablespoon of olive oil over them. Toss to coat and rearrange them cut-side down.
- Roast in the oven until fork-tender and lightly browned, about 15-40 minutes depending on size, stirring halfway through.
- While the radishes are roasting, prepare the vinaigrette by combining the orange zest, orange juice, apple cider vinegar, honey, coarse salt, and pepper in a jar. Add 2 tablespoons of olive oil, seal, and shake until emulsified.
- Once the radishes are done, drizzle them with the vinaigrette, toss gently, and garnish with chives before serving warm.
Notes
Ensure radishes are room temperature for even cooking. Use fresh ingredients for the best flavor.
