Description

A vibrant, colorful salad featuring red cabbage, juicy oranges, and sweet pomegranate, perfect for any occasion.

Ingredients

Scale
  • 1/2 medium red cabbage (approximately 300 grams)
  • Juice of 1 orange (approximately 50ml)
  • 2 tablespoons olive oil (extra virgin)
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon maple syrup or honey (adjust sweetness to taste)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 large orange (peeled and thinly sliced)
  • 1/4 cup pomegranate seeds

Instructions

  1. Slice the red cabbage finely and place it in a large bowl.
  2. In the same bowl, mix orange juice, olive oil, Dijon mustard, maple syrup, sea salt, and black pepper. Whisk until combined.
  3. Massage the dressing into the cabbage for about a minute.
  4. Gently fold in the thinly sliced orange pieces and pomegranate arils.
  5. Serve immediately or refrigerate for up to five days.

Notes

Letting the salad sit for at least 30 minutes before serving allows the flavors to meld beautifully. If making ahead, add oranges and pomegranate just before serving.
